I am planning to enroll for a few pre-med classes in the US. One property I talked to insisted they need an American social before they can rent an apartment. How can someone with a Canadian social rent an apartment in the US?

I've rented plenty here in the US and Mexico and never been asked for an ssn. I'm guessing you got unlucky with the landlord. But I wouldn't worry about it too much, you probably won't run into a whole lot more of that.

SSN is usually required to do a credit/background check, I'd have a hard time trusting a landlord that didn't want one.

I would either look at larger complexes that have experience with international students or small landlord/roommate since a lot of times they are usually willing to be more flexible, but be prepared to have to put down a larger deposit. Another idea is to try to find a sublet.
 
No that I think about it, they may try to get you to pay the entire rent up-front. I knew in undergrad whose parents wouldn't co-sign for her to live in a particular apartment, and the landlord ok'ed it if she paid up-front.
