I edited a PhD dissertation that is being published in a scientific journal (I will be cited as editor). Can I reasonably mention this as part of my application? Editing skills are good for a doctor, right? Maybe I'm reaching now...

I would not use a Publications or Research tag to label this, but it can still be a part of your application. As English mechanics are a skill set for you, you might create an AMCAS Activities entry about your writing under Artistic Endeavors and mention the editing of the PhD dissertation there. Or you can use Hobbies, which doesn't require a Contact.
 
IMO its kind of reaching. I wouldn't include under research/pubs, because you didn't actually do the research. Could include somewhere else, but I'm not sure it adds that much value. Then again, N=1...
