During the process of accepting and scheduling interviews for residency, can anyone tell me how easy it is to reschedule an interview in order to try to group your interviews by location?

Thanks.

Depends on the program and the size. In general, in large program there are plenty of interview days and programs are flexible. For smaller programs (i.e. those looking to match 5-8 residents or less), there may only be a few interview days.

There are some programs that, by report here on SDN, offer more interviews than slots. In that case, if you don't get a spot early you may not get one at all. This is much more likely in competitive fields. Therefore, you should always book an interview immediately, then cancel it if you change your mind (or try to reschedule it later).
