Are there any specific resources that help streamline finding M1 summer research opportunities that anyone has found? I have been actively reaching out to schools however I am wondering if there is an easier way to go about this.

Not really. I suspect that any nearby schools have formal programs that are earmarked for their own students. You might do better to reach out to PDs of programs in your specialty of interest to see if they can connect you directly with a PI
