Lets suppose you got a F for organic chemistry. When you retake that class, do you need an A or a B+ to get the average up to a C?

For those of you who said A, wouldn't you only need a B+ following this theory:
F -> D -> D+ -> C- -> C

There are only four drop increments below C to pass. So four increments above would go to a B+

C -> C+ -> B- -> B -> B+
 
You don't calculate grades by letters you use GPA. Each letter grade has a point value. An F is a 0.0 and an A is a 4.0. Averaging them you end up with a 2.0, which is a C. A grade of B+ has a lower point value and would average out differently. So, the answer is that you need an A.
 
To piggy back on what Scrubsy said, these are the weights AMCAS uses (which you can use to calculate your AMCAS GPA if you want):

A+ = 4.0, A = 4.0, A- = 3.7, B+ = 3.3, B = 3.0, B- = 2.7, etc.
