60 hours non-clinical volunteer
25 hours ER doctor shadowing.

2 years undergrad research -presented at national level conference.
NIH postbac research.

Advice:

Did you check the MSAR for the bottom tenth percentile for VS for each school you're applying to? I'd be sure that a good number of the schools on your list have a 7 or 8 for that number. I'm not saying you should remove all those with 9s and 10s, only that plenty of schools should be reasonable choices for your stats range.

I also suggest you continue to gain weekly nonmedical community service hours, add some additional shadowing, ideally to include a primary care doc, and look for a leadership or teaching opportunity to engage in through the application year. Let schools know about these activities via Secondary essays, update letters, or interview conversations to help shore up some of the weak areas in your application and hopefully sway adcomms positively to consider your application.
