I found a DO willing to let me shadow but wanted to me specify how many times a week/how long, etc.

I've been reading 50 hours is supposed to be a good amount of time, and was wondering if you would agree?

Also, she is going to call me in a few hours to talk this over, and was wondering if it would be okay to say something like:

Hi, i'm interested in shadowing you and learning more about what DO has to offer. I was also hoping that if you felt comfortable after shadowing, that I could possibly get a letter for my application?

This is exactly what you should say.

I don't know if stating "...and I was hoping to get a letter for my application" is necessarily something you need to say up front . I might let them get to know you first, and then AFTER the shadowing ask them for the letter.

Just ask them to shadow. Don't bother mentioning anything about DO unless you know for a fact they do OMM in their practice.
