I'll probably have around 60 hours by the time I apply in June. I work full time as an engineer and take classes so it's been very difficult to accumulate the hours. Should I even bother applying to schools that require 100+ like NYU? I really want to apply to as many schools as possible.

60 hours is plenty. 100+ hours of shadowing is completely unnecessary and I don't know why NYU requires it. You can determine whether or not you think you would like dentistry enough to pursue long, long before the 100 hour number. It just becomes boring at some point.

I completely agree. Also, you would think that someone who's giving up a career as an engineer thought long and hard about it. I'm wondering if the NYU adcom will look at my stats and see <100 and just filter me out right away.

Call NYU, explain to them your situation.
