Shadowing

So I'm slightly confused about what to do with the shadowing part of my application. I am defintaely a non-traditional student and I have about 80 hours of shadowing between three dentists while I completed my degree, but now I am working as a full time dental assistant for these same dentists (for about a year now), does this contribute to the shadowing component or negate it?
If anyone has some insight on this that would be wonderful, I reached out to a few schools that I'm interested in about this, but wanted to see if anyone else had any suggestions about it.
