I guess this would be a question best suited for those that review applications. On the volunteer, leadership and research portions of the CAS application do you prefer short and sweet, or more detailed explanations? I can easily just list bullet points of the activities I've done and research papers, but don't know how much I should say about each one. There is space to say stuff, but I don't want my application to get too wordy.

Any thoughts?

This is terrible answer but I think you have to find that balance between putting everything down you would like to communicate and not wasting any space and the reader's time. I think bullet points with a brief explanation for each is good especially if you have several things to include. If you do not have as many I would elaborate a bit about the more important ones so as not to have your application look 'empty'.
