I curious to see how the simlab is set up in dental school. Do they vary in the software they use, are the manniquins different, etc...?

They all vary, but most dental schools are starting to update from the old pole type system. UCSF has mannequins, from torso up, and monitors at each station. Many schools I interviewed four years ago had this same setup. I must say, UOP had one of the best looking pre-clinic/sim labs I saw.
