What route/residency does one interested in sleep medicine enter? Any help would be appreciated.

Psychiatry (one year fellowship after four year residency)

Neurology, otorhinolaryngology, psychiatry, and pulmonary medicine all can take a year fellowship in sleep.

Though I do think it's usually neurologists and pulmonologists that pursue sleep.
