On a lot of secondary apps and in the interview process lots of schools ask the "tell me about yourself" question.

so i think a lot of what makes me who i am is my outgoing personality. i love thrill seeking. i've jumped out of planes several times, i've piloted small prop planes, i race motorcycles (oh is it fun!), i surf, i play guitar in a band...i mean i think what i do outside of academics is really who i am and my app doesn't capture that at all. would writing this or telling schools this during the interview process be a bad thing? i mean would they look at me as a liability? i just feel like that's a unique part of my personality that i'd like to get across. good thing or bad thing? any input would be greatly appreciated.

I don't think it's bad depending on how you word it. After all, they see a new crop of students every year, and obviously they see all personalities, likes and dislikes. They expect you to have a personality other than "yes sir", "I like teeth" and "i need to study". Show them who you are in a tasteful way, and then tell them why that is going to make you a good student at their school and a good dentist when you graduate.
