I am currently in the middle of the interview process and I am considering withdrawing before the match in order to take a year to pursue an MPH (and other research opportunities... working on several projects now, would anticipate a couple of publications). Also, more importantly, I have begun to get serious with a girl who is in the class behind me, and would like to wait to attempt to couples match next year. My question is: after going on some interviews, will I burn my bridges with the programs where I have interviewed if I withdraw this year? I liked some of these programs VERY much and I would obviously apply to them again. In some ways, I think that the research and MPH would make me a stronger applicant, but I just wanted to be sure I am not making a really dumb move, careerwise.

I have already talked to the relevant advisers (Deans, home program director) at my school, but before pulling the trigger, I wanted to maybe get a second (third?) opinion. Obviously, I am going to write a VERY contrite letter to the relevant program directors.
 
There is absolutely no harm in this at all. All PD's will respect your choices, and they seem very reasonable. There's no need to be "contrite" about it -- be polite, tell people why you are withdrawing, and that you look forward to applying again next year. As you mentioned, your MPH can only make you more competitive.
