I have everything submitted to SOPHAS, 3/4 recs, 2/2 transcripts, 3/3 payments. The last thing I needed arrived 12/30. Do they actually give you a complete date, or do I just need to wait until it gets verified? My GPA calculations also aren't up.

Your GPA calculations will be posted after your application is verified. I received an email from SOPHAS only once that happened. It can take a little bit of time, for me I submitted on 12/02, it was verified on 12/13 and mailed on 12/19.
