Specific Advice on Choosing Evaluators

Of the schools I am planning to apply for, the overwhelming requirement for letters of evaluation is 2 Science, and 1 dentist. I have a discrepancy on two of the schools where one requires a letter from a non-science professor, and the other requires a personal reference. I was hoping that you may be able to help me choose between the following:

Including for sure:
Honors biology professor
Tissue Engineering lab professor (BME class). ADEA considers biomedical engineering to be biology
Dentist in my hometown

Need to choose one of these (in order of what I believe the quality of letter would be):
-Biomedical Engineering Design Course Advisor (has a Ph.D.)
-Manager for my internship in Biotechnology (has a Ph.D.)
-Engineering Professional Development Communications Class Professor (this person has an M.S. not a Ph.D., Under University standards, this course is English)

Because of my engineering focus, I did take non-engineering classes but unfortunately didn't make any strong connections with the faculty such that I would feel confident they would write me an outstanding letter.

Would anyone have opinions that would help me? I believe if I use the communications class professor, that could count perhaps for both the non-science as well as personal reference requirement-but the dilemma is that it could potentially be my least-strong letter.
