So I'm going to take another summer class, the last physics class of the series, and I'm pretty sure I can get an A in the class. Should I wait until I finish that class to submit my app? My gpa is pretty low so I want to raise it as much as I can before I submit.

Wait until after you take it to submit, because once you do submit the only time to "update your file" with new grades is after fall semester - late december/early january.
