How official are the test day results? Should I expect it to change too much/at all between now and when they get sent?

They don't change at all, what you got on test day will be your final scores.

In all the years I have worked with students the only time a change has occurred is because of suspected cheating. If cheating is suspected they can negate your scores completely.
