After the interview, should I email the program and thank them for having invited me and tell them I am interested in their program?

Is this common courtesy, something you do if you are really interested or something that make you look desperate?

If so, should I send the email to the PD him/herself or to the program coordinator or both?

You are seriously overthinking this. Contact the program, be excited about coming for an interview, book a date, and come. Anything else you do is not likely to have an effect one way or the other.
