Similar story in the news today about a woman dead in her cubicle. It was, however, only one day, but the last time someone remembered seeing her was 9am in the morning the day she died. She was found by a security guard the next day. What does it take to notice a dead person these days?

Probably slumped forward. Difficulty breathing is a common sign of an AMI for which posturing/tripoding is a frequent attempted compensatory mechanism. If he did that and never got anyone's attention, it's certainly possible, he could have simply slumped forward into his desk.
