For anyone who has taken/are taking summer school for Organic Chem, did you also do other activities like volunteer or have an internship? Or devote all time to studying? (I'm taking a 12-week Orgo I and II course w/ lab)

Mine was 8 weeks so my experience may be a little different than your's. I'm not gonna lie it was intense. Having such a short amount of time to do so much was difficult. If your's is set up similar to mine though and your weekends are normally free you could volunteer I guess during the weekends. But maybe since it's spread out over 12 weeks you'll have more free time. Mine was set up like this: Mon-Thurs lecture for 3 hours, 30 minute break, lab for 3 hours, Friday was exam day. Lab reports were due the day after you took the lab (except for Thurs labs) so I didn't even have time to study for the Friday exam until the night before. In all honesty, it's a miracle I got an A's in orgo 1 and orgo 2. It was brutal and cruel to fit a year's worth of stuff in 8 weeks...
A word of advice for orgo 2: Don't try and memorize every single reaction. Learn the general reactions for the different types of groups but let the reaction arrow show you what to do next. You will see patterns where certain atoms are more EN and will attack less EN ones. The people who tried to memorize everything in my class did not do well.
Anyway, with those 4 extra weeks I'm sure it will be a lot less stressful but don't try and take on an internship you will need a lot of time to study. Good luck! 👍
not taking organic, but i'm taking both biochem and genetics over an 8 week "semester".
i just got assigned to a volunteer shift from 9-12 saturday mornings in the oncology unit of the hospital here, but thats probably about all i'll be doing.
3 volunteer hours a week ha.
i might do a little more but i dont have a car for the summer.
