I have read a few posts by Sn2ed and Vihsadas and they have suggested doing the verbal practice with 6.5-7 min per passage. the lowest average I have reached is 7.5 min. How long is everyone else taking?

Work on getting your time lower. It doesn't have to be a sudden switch from 7.5 to 6.5. You could decrease your time per passage gradually. Maybe reduce the time per passage each week by 10 or 15 seconds. The buffer you build up now will come in handy when you face the longer verbal passages of the current MCAT. You'll probably be somewhat stressed when you take your MCAT which will further eat away at your buffer.
I usually see how many questions are given for each passage and time myself that way.
5 questions = 6 mins.
6 questions = 6.5 mins.
7 questions = 7.5 mins
That being said, EK101 passages are HARD! I got destroyed for the first one so I'm waiting till I get in more practice before attempting them again. =\
