Really quick (possibly pedantic) question for everyone!

On the example internship Essays and Cover Letters I have seen, some of them have indented paragraphs and some to not. Is there a "right" way to do this? I'd love any input!

No one cares. I'm not being mean - really, no one cares and I promise either decision will not affect your internship chances.

I didn't indent out of habit from writing grants since it saves space (though I think that is actually "correct" in formal writing).

In online app systems where you paste in the essay indents look weird. I'd make two little spaces at the beginning of each para. I agree with Ollie that it's not important, but some of the online systems make what you write into an ugly block of text that can be hard to read.
Word doc submission? Doesn't matter IMO.

Holy ****, this is the last thing I care about is an app reviewer!

Thanks for the replies and help! I have put so much work into these essays I wanted to make sure I didn't get screwed over by some small detail like indentations. I really appreciate the advice! Thanks all!!!
