Week number three, a bit belated this evening, oops!

To reiterate the challenge:
Each week will have a different food posted, and the challenge is to prepare a dish highlighting (or at least utilizing) that food. You then take a picture, chow down, and then post it on the thread, with comments and (hopefully!) a recipe. Easy peasy! Each week will also have an "additional challenge" for the food that you can choose to acknowledge or ignore - just for fun.

Additionally, the food for the next week will be posted along with the current week, so anybody who doesn't have the ingredient on hand can put it on their shopping list.

Current Week's Food: Corn
Current Week Dates: Sunday, 6/3 through Saturday, 6/9
Additional Challenge: Add some spice!

Next Week's Food: Sweet Potato - put it on the shopping list!
Next Week's Dates: Sunday, 6/10 through Saturday, 6/16

Corn on the Cob

Take corn on the cob, remove husk. put on sheet of foil and add butter, herbs, spices, what ever you want. wrap in foil and throw on grill or put in over at 450 for 20-30 minutes.

I have to sit this one out (like I haven't the others :laugh::laugh:). I don't eat corn. 🙂

I don't eat corn when it looks like corn. :laugh: How about tortillas or something like that?

Same here, the closest I get to corn is tortillas and tortilla chips, and that's only out at restaurants. (Edit: apparently we were on the same wavelength PetPony :laugh:)

I'm all over sweet potatoes next week though. Those are a staple food in our house. 😍
 
See, I can't eat sweet potato at all.. But maybe I'll make something for the bf and post that. He loves sweet potato.

Aww....that's sad. I'm to the point where I can't make myself eat regular potatoes (not that I liked them much to begin with), because they just don't have any flavor compared to sweet potatoes.

I 😍 normal potatoes! Mashed potatoes, grilled (not sure what else to call them), potatoe salad, potato gratin, etc. So many things we make with them. 😍

Lol, I make most of those with the sweet variety! In fact, I'm going to have to restrain myself from posting 12 bajillion recipes next week, instead of one.
 
I say as long as the recipe contains corn or is a corn product, it's acceptable. 👍

👍 I'm really not picky - if you don't like real corn, make something with corn tortillas or corn syrup or corn meal. Point isn't to make you eat something you dislike, it's just to share ideas and maybe try something new.

Like Katryn, I discovered sweet potatoes as a love about two years ago and have severely decreased the amount of normal potatoes I eat in favor of them.

I'll probably have a real corn recipe, but I wanted to make Chicken Pot Pie, and had fresh whole ears of corn on hand. So I put mayo/salt/pepper on them, and roasted the ears on the grill while I cooked the chicken for my pot pie next to it. 🙂

Not totally completely corn-y, but had chili and spaghetti for dinner tonight and made cornbread to go with it.

No recipe, because, yes, I used a box of Jiffy's corn muffin mix, but I did add frozen corn pieces and chili powder to the mix. Makes it so so much better. Also, when the box says to let the batter sit for 3-4 minutes and give it an extra mix right before putting it in the oven, DO THIS! It really makes a difference.

FYI, sweet potato fries are delicious. You may just find you like that particular sweet potato recipe. 🙂

I've only had them at a college dining hall though. Maybe worth trying somewhere else.. 🙄

I'm actually planning on making a wet corn bread for this challenge... mmmm!
 
One of my favorite recipes for summer is made with corn, and coincidentally I made it tonight before I even saw this post! :laugh: I absolutely love this recipe because it is soooo simple, has few ingredients, and is great for those hot summer days when you don't want to use the stove. Enjoy!

Anyways, idk what its called... bean and corn salad? whatever. All you do is take a can each of corn, pinto beans, black beans, black eyed peas, or any other bean you prefer (about 3 or 4 total). drain them and put them in a mixing bowl. Add about 1/2 cup ranch dressing and about 1/2 cup salsa (rough estimates, feel free to add more or less depending on the texture you want). Mix it all up and eat the dip(?) with tortilla chips!
 
I did something like prevetdreamer just posted for dinner tonight! With some modifications, of course.

Ingredients:
3 ears of fresh corn, grilled Just used a can of kernel corn.
1/2 cup black beans
1/4 large red onion, diced Didn't have, used white with a tiny bit of brown sugar sprinkled on top.
1 extra large avocado, chopped
1/4 cup fresh cilantro, chopped
1 finely diced jalapeno (halved this because my roomie is a spice wimp).

{Dressing}
2 tbsp white wine vinegar Didn't have, used lemon juice instead.
2 tsp olive oil
1/2 tsp sea salt
1/2 tsp cumin Didn't have any, didn't sub.
1/2 tsp paprika
Juice of 1 lime
1 clove of garlic, finely minced

Method:
Grill the ears of corn and allow to cool. After the corn is cool remove the kernels from the ears. In a large bowl, add the corn, onion, avocado, black beans, and jalapeno. In a small bowl, mix together the ingredients for the dressing. Pour the dressing into the large bowl and add the fresh chopped cilantro. Gently toss the salad together and allow it to marinate for at least half an hour in the fridge. The longer you let it sit, the more developed the flavors will become! Garnish with additional cilantro if desired. Serve cold.

(Also, added a tiny amount of sour cream on second serving - was delicious and creamy)!

This is kind of last minute, but I have a submission. I actually made something earlier in the week with friends, but I didn't actually play enough part in making it. Instead, my boyfriend and I teamed up today to make this:

Beefy Aztec Casserole

Recipe borrowed from here and tweaked:

My version:
Ingredients
9 large flour tortillas, halved
24 ounces of salsa
2 cups sour cream
2 cups shredded cheese (I used a Mexican blend)
1 cup whole corn kernels
1 pound beef
taco seasoning
Any additional seasonings you want to add (we used chili pepper and chopped onions)

Directions
Cook the beef with the taco seasoning. Combine this with all the rest of the ingredients (except the tortillas). Layer a 9x13 inch dish with half of the tortillas. Layer half of the mixture on top. Put another layer of tortillas and then the remaining mixture. Bake for 30 minutes at 350 degrees F.

It was very good and spicy! It was a hit among my boyfriend's family, too!


Please do post something! I love seeing all the different recipes on here.

Um that looks amazing and oh-so-horrible for me... definitely going to try it sometime, haha.

And same to Emiloo - post as late as you need to, as usual nobody bites.
