Transferring universities, include shadowing in application?

I am considering transferring universities for next year. I have a great deal of ECs, but would like to include my shadowing as well. Do you think it is appropriate to include this, or is it meant more only medical school applications?

If you have space and nothing else to include, you might as well. It shows that you have a career goal that you are dedicated to achieving that goal. It can do no harm.
