I will be graduating in May. Will probably get a full-time job as a CNA in an ER for good clinical experience. IF I keep up volunteering and shadowing do I need to worry about doing more?

What other types of things could I do to strengthen? I do not think I will be retaking my MCAT.

EDIT: I also plan to submit VERY early, haha.

A good gap year for you would be doing the CNA thing while studying and retaking your MCAT. Can you get in with a 30 mcat? definitely with that gpa. But if you want the best gap year you can have I'd retake that MCAT to match that golden GPA while working.

I took my MCAT while working two RN jobs (50-60hrs/wk), studying for the MCAT while working can be done easily and would greatly benefit your application if you were able to score 33 or higher, even a 32 would be great.

Texas schools aren't too bad though, so if you want to have a more moderate gap year maybe get involved with a community service project that you can take charge of.

Good luck, you look like your on the right path.
