If you search SDN I'm sure you will find entire threads devoted to this very topic. I know this because not long ago I was asking the same question before my interview and got some help here at SDN.
Unfortunately the real truth about the essay is........well...... Nobody really seems to know why they ask you to do a timed essay. Those whom I've spoken with all agree; we have surmised that its main purpose must be to make sure you can: 1. Write in English. And 2. Be able to string some words together in some kind of coherent fashion, i.e. COMMUNICATE effectively.
If I were you, (and in a sense I was you not too long ago) I would practice with the timed Kaplan MCAT practice essays USING THEIR STRATIGIES. I would do enough of those bloody practice essays until you feel quite confident. Because, they (ucsf) are very likely to throw out some random question to you like "Do you think supreme court justices should have life-time appointments?" and you will need to be able to formulate and produce a halfway decent argument in under 15min.
Again, I don't know how much weight they put on the essay when they are evaluating your total package, but you might as well do the very best you can.
