I'm currently premed and have a few publications - will these hold any weight on a future residency application?

A bit premature don't you think? Focus on doing what you enjoy and getting into medical school. Residency is too far away to speculate.

Unlikely in the absence of continued academic productivity (especially work related to your undergraduate work), but they would certainly be worth listing on your CV/ERAS application.
