Unique Case for Pre-Med, need advice

I have quite a unique case for medical school applications. I am currently 16 and finishing up my junior/senior year in college (done in December 2019). I was born in 2003 but my dream is to become a doctor.
Stats: 3.97 GPA, MCAT in 2020

Research - one summer doing pharmacological research in China, one year of senior independent research, potential REU this summer

Shadowing - 50 hours with GI doctor

Non clinical - 100 hours involving non-profit organizations
Future - non clinical volunteering at soup kitchens, habitat for humanity, etc. Also trying to become a medical scribe.

My biggest issues are with clinical experience and volunteering. Due to my age, I’m unable to interact with patients in a non-observational way. I’m not quite sure how my application adds up, and I plan to take a gap year after I graduate from December 2019 - September 2021. Unfortunately, I will only be 18 by March 2021, which means that I can’t get meaningful clinical experience until my application is nearly complete.

Do you guys have any advice on what I can do to make my ECs more competitive? Should I go to grad school for a few years first? I’m relying entirely on strong non-clinical and stats, but a high stats applicant without clinical experience feels like an instant rejection.
 
Ideally you would have 200+ hours of clinical volunteering with patient contact by the time you apply in June 2021. If you plan well in advance you should be able to fine a position from March 2021 to June 2021 which would allow you to accumulate those hours. Medical scribe hours also count as clinical interaction especially if you are in an ER position.
