Biochemistry, Anatomy, Physiology, Microbiology, Histology, Immunology, Cell Biology, Pharmacology. Those are the only ones I can think of.

👍 not all schools need these course. Some dental schools only need the basics. But having an upper bio class is like having an upper hand. It might help you get admitted or at least be more competent.

take these classes if you know you will ace them. Otherwise, dont let them bring your GPA down.
if you are thinking about taking them, i would take Cell bi, Biochemistry and Anatomy first.

They are very important, some dschools like baylor only accept if you have 30+ bio credits majority being upper level

can anybody please tell me what upper-level science courses are?

normally, they are the 300 or 400 level courses offered by the biology/bio-chemistry departments.

are there usually prerequisites for these classes?
