what are some important facts to know about UV spec? The only thing I know is that compounds with conjugated bonds give a strong signal. Are there any good numbers to remember like 1700 and 3300 for IR spec?

For the MCAT, it is important to know what you seem to already know - that the UV spec is used to determine whether pi bonds are present in the compound by taking into the consideration the strength difference between sigma and pi bonds.
As for any specific ranges or numbers to know for a UV spec - my advice is that this is unnecessary info. If the MCAT wanted to test you on this, it should provide enough info in the passage or question to allow you to solve it without having memorized any values.
