I'm going on a volunteer medical mission with a group of doctors and dentists in late June/early July. Should I include this on my application if I plan to submit it in June?
 
I think you could put it on, as long as you do it.

Also, almost 100% chance you'll be able to talk about this during interviews

I think you can only include volunteer experience that you already have but I may be mistaken. If there is a way to include it, I say go for it. It will likely come up in interviews as previous poster mentioned.
 
I put research on my app that I had just started and put my expected number of hours. In the description, I noted as such. I don't see why you couldn't put it with expected hours but describe it to that effect. When you complete the trip, maybe shoot an email to the adcom with a quick note about your experience and how you feel it makes you a great candidate for that school.
