Waitlist stats--is there anywhere that we can find these? After being waitlisted at 3 schools with no acceptances in the beginning of December, I want to know what my chances are of getting into particular programs off the waitlist. Any ideas?

Nope. These types of things are impossible to determine.

Now this may upset some tender snowflakes, but as of right now you are rejected until you get that acceptance email in your inbox.

So you should be working on your plan B, and stay busy.

Every program operates its waitlists differently. In general I would remain optimistic, but there are no guarantees.

It's hard to say in general what your odds are for a given program, but in general the odds that you'll get 1 program to let you in are decent — old rule of interviews in 3, a doctor you will be.

That being said, do follow Goro's advice and keep prepping until you get an acceptance
 
Agree with others--while having 3 early WLs means you're still live for sure, it's impossible to know for sure your chances. You could probably look at the relevant schools' prior year school-specific threads to get a general idea of how much WL movement there is and when you might expect it, but you won't know the denominator of all students on the WL.

But bottom line, you need to try and improve your app. You got 3 interviews, and they were relatively early, but you weren't able to translate them into an A yet. Did you get any sense of how you performed at the interview stage? Would be important to reflect on this both in case you have subsequent interview (so you can do better) or if there was a specific deficiency that was highlighted by your interviewers (that you can try to shore these up in case you need to reapply).
