waitlisted but considering deferring a year even if i get in

Whether or not you can defer off of the waitlist is school dependent; I know that if you accept a waitlist spot from my med school, you are expected to be at orientation (i.e. you cannot defer).

If you tell them now right out that you are planning on deferring regardless, that will likely hurt your chances of getting an offer off that waitlist. The waitlists are not set in stone, people move up or down based on any updates submitted to the school. An update like that would likely move you down the list.

Don't be too confident in getting into the americorps program you're interested in. My americorps program had a 10-15% acceptance rate, though I know a few americorps that were desprate for people, so it could go either way.

I am pretty sure this will destroy any chance you have at getting off of the waitlist. They are using the wait list to fill their class and find people who will definitely take the spot. The purpose is not to find people to fill next year's class.
