Well, your state schools have given you interviews, so you have a solid chance of getting in!
2000 hrs volunteering nonclinical w/ club that provides STEM mentorship for underserved students w/ 2 yrs leadership position
That's a lot of hours. Were you able to get out of your comfort zone and help people less fortunate than yourself? Is this through your undergraduate or a school? I feel like the general consensus on SDN (at least what I have seen) is that you have to get off campus. If you end up not getting in, perhaps volunteering at a food bank/food closet, homeless shelter, or somewhere you can help veterans or refugees (or another group that you want to serve) would be beneficial to add.

Thanks so much for your input! I joined my first quarter in college, and put in a lot of hours through my leadership position. I don't know about get out of my comfort zone because I already loved tutoring and mentoring before joining! But we worked out of title 1 middle schools, meaning over 40% of students came rom low-income families, and went to schools every week as an after school program. We provided science fair materials at no cost and hosted a science fair at the end of the year on my undergrad campus.
