Hi all. Looking for some feedback on if I should bother applying as a Canadian applicant. Have posted here in the past but coming back with a stronger application, i hope?

About me...

28F, canadian, queer and rurally raised

undergrad GPA - 3.1 ish
masters GPA - 4.0 (**important to note that i had to withdrawal from my M.Sc due to familial financial issues and I needed to work to help my family)
post-bacc in med physiology and pathophysiology - 4.0

MCAT: 511 (pls note i rewrote a few times).

Research:
1 year undergrad research assistant in analytical chemistry (60 hrs)
2 years M.Sc project - about 4000 hours?? it was full time
8 poster presentations (local and national)
1 pub

Awards:
4 in total, nothing huge though

EC's/volunteer/work/shadowing:
-volunteering with older adults that have alzehimers/cognitive delays - 98 hours
-volunteering at a museum - 68 hrs
-science outreach volunteer program - about 20 hrs
-hockey player for my entire life up until today, play in an adult league (beer-league type of thing)
-1 semester of research in a medicinal o chem lab - about 30 hrs
-caterer for many years, about 3000 hours
-lab instructor / head teaching assistant (gave lectures, created quizzes and exams, graded assignments, supervise students in the lab) - probably 1700 hrs or so
-shadowing 2 eye surgeons - maybe 20 hrs or so
-doctors assistant and head sx coordinator - 3 years - 6000 hrs. **lots of patient contact and 1-1 working with surgeons/docs.

References:
Very strong and would be very personal as I know them all very well through work and research. It would be 3 surgeons, 1 comprehensive opth, 3 professors/PI's

My concerns: MCAT too low for a Canadian applicant? undergpa will continue to hold me down? Should I bother applying and if so, what schools will consider my post-bacc heaviest?
