Accumulate another 100+ hours at the Food Bank. You could add these schools to your application:
California University
Loma Linda (if you fit their mission)
NOVA MD
Wake Forest
Eastern Virginia
Virginia Commonwealth
George Washington
Drexel
Temple
Jefferson
Penn State
Hackensack
Albany
Vermont
Quinnipiac
Oakland Beaumont
Wayne State
Medical College Wisconsin
Rosalind Franklin
Creighton
TCU
Ponce (St. Louis)
Belmont
Alice Walton
Roseman

Getting another 25+ hours of shadowing in a different specialty or primary care would also help you get a broader picture of the diversity of medicine.
Would it be more beneficial for me to shadow primary care? I was planning/interested in shadowing a little IR.

Primary care! Likelihood of becoming a primary care physician is orders of magnitude greater than the chances of becoming an interventional radiologist
