If you have, you can really work on filling up your time with the non-academic activities you need to be prepared for applying.
Projected hours are not meaningful to the admissions committee, so the hours you have completed by May 2026 will be the important ones.
Try for shadowing (40 hours) Community service non-medical volunteering (150 hours)
I think your COVID testing and vaccine administration hours can count for clinical activities
Holding a pharmacy job also shows responsibility in a related-to-medicine field.

What are you doing as a scribe? (You can reasonably claim 50 hours of scribing as physician shadowing, since you have so many hours already in place... right?)
I'm also good with your COVID and pharmacy experience, but you must balance that with hospital-based experiences. Otherwise, it appears to me that pharmacy is your backup.
I'm worried about all your hypothetical/projected hours; I feel like you're shooting for a best-case scenario by checking boxes since you haven't done the work already. That's going to affect your chances. What is your purpose as a physician? What you have written (and likely will delete) gives me a sense you only care about getting into a medical school.
I commiserate with taking care of a chronically ill cat, but it's only worth mentioning in a VMCAS application.
