all the secondaries ask for publications with full citations. So which of these will count?

patent
abstract
poster presentation
undergraduate journal
educational (non-research) journal

i am not sure if any of those count as publications.

Publications are articles in peer reviewed research journals.

Educational journal articles may count, but I don't know exactly what that means.

Note, that all of the things you listed are positives for an application.

patent = no
abstract = yes, if the conference you presented at publishes a proceedings from the conference. Check and list this as "Published Abstract"
poster presentation = No, not the presentation, although this goes on CV.
undergraduate journal = Don't think so, what is this?
educational (non-research) journal = Don't think so, what is this?

I wouldn't count any of those things as a "publication," although you should still list them all as evidence of your research accomplishments. Having a patent as an UG is an especially impressive accomplishment, so make sure you highlight that one prominently!
