So I was accepted to a pharmacy school recently, but they only gave me a 2 week deadline to accept the offer. I applied to other schools as well and received interviews that I have to go to that are after the deadline. I want to keep my options open. Has anyone been in this situation? How do you go about this?

You accept offer and pay deposit to secure spot. Once you get into your top choice you drop your spot at previous school. Though you will lose money but in my view its better than loosing acceptance from previous school just incase you got rejected from other schools.

The other schools won't find out that I accepted my offer right? Like will they cancel my interviews?

Agreed with CMUchicka. Paying the deposit could be a loss of money, but you get peace of mind. And at least you'll know you're going to a school for sure! You can also try calling the admissions and see if they're willing to give you an extension on the deposit deadline

Have people been able accomplish that? Like calling the admissions office and getting an extension?

I know of a couple schools that allow you to extend your deadline, so it was just a suggestion. Doesn't hurt to try 🙂

If I were in your situation, I would put the deposit in just to have a backup. Better that than regret not putting in the deposit if God forbid you don't get into the others.

From PharmCAS's website:

On a dynamic basis, PharmCAS degree programs will receive reports regarding the number of offers of admission made and number of offers of admission accepted for those applicants the degree program shares with another PharmCAS degree program. Your designated PharmCAS degree program will know how many offers of admission you have received and how many offers of admission you have accepted at other PharmCAS degree programs. PharmCAS degree programs will not know how many applications you have submitted. They will also not know whether you were denied admission to another pharmacy degree program or be informed of any other admission actions made by other PharmCAS degree programs, except offers of admission made or accepted.

So they will know that I accepted another program before my interview?

They'll most likely receive the update from PharmCAS, but as I don't know how often they send updates. As for if the school will see it before your interview, there is a chance yes. Keep in mind though that some people will accept at a school that is personally ranked lower for them the hold a spot while they wait for a decision from a school they would prefer more. If you had already interviewed, I'd advise calling the school you prefer to explain the situation and ask for an update, but obviously that's not an option if you haven't interviewed yet.
