What do they look for in the essays?

Hi I am in the process of doing my applications and many of the schools require that you write several essay. They do give you the topic but what excatly are they looking for when reading them........the research, the personal touch...what are key things to put in to make me a excellent candidate. If anyone has tips on what to put or where to get research done or even any tips for applications to the various schools incld; ICO, Texas, SCO, SCCO and Pacific. Thanks in advance.
