I took the MCAT twice, and my first score has 'expired', but what does that mean exactly? I am filling out my AMCAS and the score is still showing up on it. Will schools still see the old score?

"MCAT scores expiring" is a school specific thing. AMCAS still sends every score they have on file for you to every school, no matter how old. It's up to the school to decide how they review the scores.

I think it means that the schools see them but don't accept it as you haven't fulfilled the requirement. So if you have an old MCAT score (MSAR lists the latest test date that schools will accept), you'll need to retake it.
