If I already have a 3.0 gpa in Business and I complete premedical classes with a 3.9, which grades are considered? Is science gpa more important than overall gpa?

They're both considered. When you complete the primary application (and even on some secondary applications), you'll be asked to identify which classes are the science classes. Then it will calculate both your cumulative GPA (cGPA) and science GPA (sGPA). And to answer your last question, yeah sGPA is usually more important than cGPA, but it will raise some flags if there is a massive discrepancy between them.
