What GPA is considered in med school admissions?

They're both considered. When you complete the primary application (and even on some secondary applications), you'll be asked to identify which classes are the science classes. Then it will calculate both your cumulative GPA (cGPA) and science GPA (sGPA). And to answer your last question, yeah sGPA is usually more important than cGPA, but it will raise some flags if there is a massive discrepancy between them.
