Nothing.

You should learn it.
-
memorize pKa values for the 100 most common organic molecules

know all of the rxn's and reagents. how the reagents are used on things like alkenes/benzens/carbonyl/carbox derivs etc...
know reagents that oxidize and reduce and how and if they work on ketones/esters/nitriles/alcohols/carbox...
know how a reagent can make certain products cis or trans or racemic...
make sure you're comfortable with quickly designating R or S and know the diff between diastereomers/enantiomers/meso....
conceptual stuff about which ones are soluable in water/high pb&mp...

i guess i'm not being that useful, huh? but i'd say praticing with your orgo book should give you a great exercise...what was the most helpful for me is having gone through my text book and solving all of the highlighted problems that are integrated into each of the chapters - i used wade (chapter 2 - 22 and if you're pressed for time to go through 10-22 but not forgetting the SN1/SN2 E1/E2 chapters) but McMurry is awesome too...McMurry is great for easily explaining concepts while Wade is great with mechanisms and asking questions within the chapters.

There is no such thing as must. I think if you get a bunch of those DAT prep books you'll get the idea for what you need to know. There are thousands of questions they could ask, try and cover ALL your bases.

A good overview book is the ACS Organic Chemistry Exam study guide. it has everything you should know.

Yes I agree with previous posts, don`t memorize, you must understand it. You know that the questions will be different on each DAT, I wouldn`t gammble with selective memorization. You never know what they decide to put on the DAT. Your safest bet is to learn everything from the organic chemistry college course. By learn I mean understand how to do the problems. You shouldn`t memorize any overly complex structures and their molecular weights, but know how to name organic compounds.

If you have kaplan orgo flashcards, they will help you memorize/ understand the reactions and concepts while you riding a bus or taking coffee break.
