What site has information about the undergrad major of all admitted applicants?

I don't believe there is any. AAMC has their FACTS data, but thats only shows demographics based on age, sex, location, race, GPA, MCAT etc. Major is rather inconsequential in the grand scheme.

What site has information about the undergrad major of all admitted applicants?

The AAMC has a table at https://www.aamc.org/download/321496/data/factstablea17.pdf which shows total numbers for general categories of each undergrad major (applicants vs matriculants) and their average MCAT and GPA.
