A resume is your standard one to two page layout, formatted as either
education/work history in chronological order, or the more evasive but
all-inclusive "skill set" which lists your skills, examples and the
employers where you utilized those skills (good for covering those
mysteriously brief periods of employment).
A CV (or curriculum vitae, for you lovers of dead languages), is normally
used in academic settings and contains your chronological education history
(starting with your first bachelors degree), your employment history, your
list of published works (in reverse chron order) your research projects and
grants, your speaking engagements, etc. Attach relevent publications.
Basically a CV contains all the details that were omitted from your resume,
as well as backup documentation.

A CV IS a resume. Note the definition fruity gave "as for a prospective employer" When I worked in England, the only thing that anyone asked for was a CV and my Aussie housemates also used the term CV in lieu of resume. If you want to modify your resume for different applications then that is smart, but it is still a resume/CV.
