When should I MCAT/Apply

Hello everyone, I am a junior at university with an excellent GPA. I'm going to be finishing biochem and orgo chem 1 at the end of this coming year (spring 2020). By that this next summer, I'll have over 100 clinical(free health clinic scribe) and nonclinical(food pantry) volunteering hours. I do some shadowing as a part of my job at the clinic(obviously, but only primary care). Additionally, during my senior year(Fall 2020) I will be doing research to boost my application.
My ultimate question is, when should I take my MCAT? I feel my extracurricular activities are up to par, I've been thinking about taking it junior year summer(going into senior year) so that I don't have to take a gap year. One drawback of this would be preperation time and the fact I haven't taken orgo chem 2. What do you guys think.

You take the MCAT when you are fully prepped and ready not over a concern of a gap year. Your first concern is to do well on MCAT so you can be a competitive applicant. Else every year will be a gap year for the rest of your life as you wont be a doctor
How will I know if I'm fully prepared? I am thinking about taking the Kaplan/princeton MCAT 510+ guarantee course and then going in
