So, I'm a second-year student, I haven't taken the MCAT, but have a gap 3.73. I have some ECs. But when should I start compiling my list? I hear some do it the year before, other three years before, and some a few months before. I feel like I should just wait but should I?

It doesn't take long to compile a list once you have an MCAT score, literally 20 minutes. You can familiarize yourself with the average stats of some schools that you are interested in beforehand but there really isn't much point until you have an MCAT score

Yeah, that's what I thought. Mind you it did take me about 2 hours to figure out that if I lift my stats a bit and have an average MCAT score I will have 12-15% chance to getting into UNC-med... (my dream)
