When to ask my professor for a letter of rec?

So I know sooner is usually better when it comes to asking for letters of rec. But here's my issue:

I'm a Spanish major, and the only science classes I've taken are my large pre-reqs, so I honestly didn't get to know my professors very well. At this point, I have my math professor/boss writing me a letter of rec, as well as a non-science professor. So that leaves me needing one more letter from a science professor.

I really like my biology professor this semester, and because of the weird format of the class, she has actually seen how I work with others and the amount of work that I am putting into the class. However, I've only known her for a month now, and the class is only once a week, so I've only had three classes with her up until this point. So obviously she doesn't know me that well yet, but I feel like by the end of the semester, she will know me well enough to write a somewhat decent letter for me.

Here's the issue: my school requires us to send them our letters of rec so that they can write a composite cover letter or whatever. If we want the letter submitted to AMCAS by August 1st (seriously, that's so late!), we have to have submitted all of our letters of recommendation to the pre-med people by April 1st. I'm pretty sure that the earlier you submit your letters, the earlier they'll have your cover letter done for you.

So obviously I should ask by April 1st, because not being complete until after August 1st because of a stupid cover letter would totally suck. So that makes me want to ask for the letter as soon as possible. But on the other hand, this professor hardly knows me, so the sooner she has to write the letter, the less she'll have to say.

Anyone have an opinion on when I should ask her? Also, how long should I give her to write the letter?
 
I would ask around March 1st. That way, she has a month before the letter is due, and has another few weeks to get to know you before you ask.
