Which courses count as English vs Humanities?

I know philosophy is humanities but can it count for English too?

Does fine arts, government, and special studies courses count for humanities?

For your first question, I am not sure but I would safely say, probably not.

Does that course fall under English department in your school? Even if the course title is something English, but if it's under philosophy department, there is a chance that it might be shown up as humanities in AMCAS and adcoms might fail to count that for your English requirements.

I'll put philosophy courses under humanities.

This is for secondary applications btw.

I have one English course that is clearly English. And then 2 course that AMCAS kept my classification of English as but they're not from the English department. They're clearly English though. I analyzed literature and different thinkers and wrote papers.
